Mini Carrot Cakes
makes 15
You will need:
2 large eggs
175g caster sugar
2 tbsp sunflower oil
200g self-raising flower
1tsp mixed spice
2 carrots, finely grated
Instructions:
1. Pre-heat the oven to 180 degrees, which is gas mark 4.
2. Mix up two eggs, 175 grams of caster sugar and two tablespoons of sunflower oil
3. Mix thoroughly
4. Fold in 200g of self-raising flower, 1 teaspoon of mixed spice and the 2 grated carrots
5. Pour equal amounts of the mixture into cake cases
6. Pop them in the oven for 20-25 minutes
For the icing, mix together:
110g butter
625mg icing sugar
20ml milk
